In a skillet, heat vegetable oil over medium-high heat. Add chicken breast and cook until browned and cooked through. Remove from skillet and set aside.

Add bell peppers and broccoli florets. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, honey, cornstarch, water, salt, and black pepper.

Pour the sauce into the skillet and stir until thickened.
