  1. Season the chicken breasts with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add garlic and cook until fragrant, about 1 minute.
  6. Add pineapple chunks, dried apricots, honey, and water to the skillet.
  7. Stir to combine and bring to a simmer.
  8. Return the chicken to the skillet and cook until the chicken is cooked through and the sauce has thickened, about 10 minutes.
  9. In a small bowl, mix cornstarch with water to make a slurry.
  10. Add the cornstarch slurry to the skillet and cook for an additional 2 minutes, until the sauce has further thickened.
