Barbecue-Stuffed Corn Muffins
Corn muffins are a popular dish in Southern cuisine, often served as a side with barbecue.

Preheat the oven to 375°F (190°C) and grease a muffin tin.

In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, egg, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fill each muffin cup halfway with the cornmeal batter.

Top each muffin with a spoonful of barbecue pulled pork, cheddar cheese, and sliced green onions.

Spoon another layer of cornmeal batter on top to cover the fillings.

Bake for 20-25 minutes, or until the muffins are golden brown and cooked through.

Remove from the oven and let cool for 5 minutes.
