  2. In a bowl, mix together the dried fruit mix, pistachios, breadcrumbs, fresh herbs, garlic, olive oil, salt, and black pepper to make the stuffing.
  3. Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through. Open the pork loin like a book.
  4. Spread the stuffing evenly over the pork loin.
  5. Roll up the pork loin tightly and tie it with kitchen twine at 1-inch intervals.
  6. Season the outside of the pork loin with salt and pepper.
  7. Place the pork loin on a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
  8. Remove the pork loin from the oven and let it rest for 10 minutes before slicing.
  9. Slice the pork loin and serve with your favorite sides.
